10:30 – 11:00 am – Sushi Lecture, Study

Sushi Making Essentials

· Review of proper hygiene and handling fish

· Discussion of the process of selecting the fish, rice, vinegar, and soy sauce components

· Review and tasting of nori varieties

11:00 am – 1:00 pm – Hands-On Training, Kitchen

· Preparing Sushi Rice and sushi vinegar

· Rolling Sushi. Topic will cover Traditional Hoso-maki (one or two ingredients in the center), Traditional Futo-maki (several ingredients in the center), Uramaki (inside-out roll), Saiku Sushi (decorative sushi), and Temaki (hand roll – not using makisu-sushi roller)

SUSHI PART 2/NIGIRI SUSHI CLASS Is Scheduled For Monday, January 12, 10:30 am at Astor Center.
