Black Sesame Sweet Tofu
Yield: 12 portions
14g Gelatin, bloomed
100g Black Sesame Paste
1. Heat up 1/2 of soymilk. Do not boil.
2. Add sugar, stirring continuously
3. Add bloomed gelatin until dissolved
4. Add the rest of the soymilk
5. Add Black Sesame Paste until the mixture is darker. Mix well with beurre mixer.
5. Cool over ice bath.
6. Pour into glasses; let sit 3-4 hours in refrigerator before serving.
